These are so yummy, and they take just a few simple ingredients that we always have in our pantry. We can whip them up when we have guests or any time we just need a little something extra yummy.
I don't know how people generally like to read recipes online, but I know I hate scrolling through a bunch of pictures to get each step! So, for those of you who are visual I do have lots of pictures, but for those like me I also have the recipe written out nice and concise at the end. Choose your weapon. And let's get started!
Combine 1c chocolate chips and 1 stick of butter in a microwavable bowl.
Heat until the butter is melted and give it a stir. If the chips aren't done yet, heat it a bit longer but keep an eye on it because they can burn pretty easily. You want everything melted and mixed together nice & creamy.
In a separate bowl, combine 1 c. powdered sugar, 1/3 c. flour, and three eggs.
Beat with a fork to combine. You want it well mixed, but I always have lumps in mine. (and the dark spots are chocolate, I just use the same fork from my chocolate melting).
Add the chocolate to the egg mixture.
Stir quickly to combine, and mix thoroughly.
Divide the batter into lined muffin cups. It's important to use liners because later we'll be inverting the cakes onto a plate. I've seen recipes that call for a chips ahoy cookie in the bottom of each cup, if you do that the mix will fill 12 cups. We always skip the cookies because we just like to use things we have on hand, so we fill more like 9-10 cups.
Or you can use some pretty ramekins. They seem more romantic for Valentines Day. :) When we do this we just eat them out of the ramekin. I have no idea how I would get them out!
Bake the muffins at 425 degrees for 8 minutes. When you remove them the edges should be firm, the middles should still be soft and jiggle if you shake the pan. (for the ramekins I did about 20 minutes, but I checked them every minute or two after 15 until I liked how they looked).
Let them sit for 1 minute, then turn each cake upside down onto a plate and remove the wrapper. Top it with a dollop of whipped cream. We like to use it straight from the freezer so it's nice and cold with the warm cakes. Add a few strawberries or raspberries to garnish if you have them (again ours are from the freezer).
Dig in! Yum yum!

- Preheat oven to 425 degrees. Line muffin pan with paper liners. *optional - if you want you can put a cookie in the bottom of each muffin cup
- Combine chocolate chips and butter in a microwave safe bowl. Heat until the butter is melted, then give it a stir. If they chips aren't melted yet heat it a bit longer until they are, but keep an eye on it so they don't burn. Once everything is melted mix it until well combined
- In a separate bowl, combine powdered sugar, flour, and eggs. Stir until well combined (it will be lumpy).
- Add the chocolate into the egg mixture. Mix quickly until well combined.
- Spoon the batter into the muffin cups until about 2/3 full. If you are using cookies it will fill 12 cups, other wise it will fill 9-10.
- Bake 8 minutes until edges are firm but the middle is still soft (it should jiggle when you shake the pan).
- Remove from the oven and let sit 1 minute. Carefully invert each cake onto a dessert plate and remove the paper liner (you won't be able to move them once they are out of the liners, so put them where you want them to stay!). Top the cakes with whipped cream and sliced strawberries or raspberries. Enjoy!
These are the size of small muffins, so you may want to plan on 2-3 per person.
Or just make a ramekin-size cake for everyone.
Plus then you can eat them right out of the ramekin!
But there is still one thing sweeter than chocolate volcanoes.... it's B!
Turns out he loves doing the dishes. He starts by helping me fill the dishwasher, and then wants to help wash what ever is left over. He'll still feel that way in high school, right?
He gets them all soapy and sticks them in the dish drainer. And then I do some touch up work. I could tell you were worried about that. :)
