Blueberry Cream Pie

I don't post recipes very often, but I just made this summer favorite last week and it was too good not to share! It's a perfect summer dessert - creamy, fruity, fresh, and subtly lemony.

CRUST
1 1/2 c. graham cracker crumbs
1/3 c. sugar
6 Tbs melted butter

Combine ingredients and mix well. Press into a pie pan and bake at 375 degrees for 7 minutes. Let cool completely before filling!

CREAM FILLING
1 c. heavy cream
8 oz softened cream cheese
1/3 c. sugar
2 tsp. lemon juice

Beat ingredients together until smooth and creamy. Pour into cooled crust and spread evenly.

BLUEBERRY TOPPING
3 c. blueberries
3/4 c. water
3/4 c. sugar
3 Tbs. cornstarch
1 tsp. lemon juice

Combine in a saucepan and cook over medium heat until thick and bubbly, stirring constantly. Constantly-ish. It's fine. Cool completely. Pour over top of the cream filling and carefully spread evenly. Note: I only used half the topping this time and actually preferred it that way. You do you.
