I'm just going to list all the recipes for you in this post because they're so short and simple:
Pumpkin Sauce Soup
Ingredients:
- 1 jar of Pumpkin + Butternut Squash Pasta Sauce (I love the one from Aldi - I buy a case every fall!)
- 1/2 - 1 c. heavy cream
- milk to thin
- salt and pepper
Ramen
Ingredients:
- chicken broth
- diced carrots
- diced onion
- minced garlic
- Ramen noodles
- spinach
- leftover chicken, chopped
This one takes a few minutes to prep and get the veggies chopped, but once that's done it's super easy. Just simmer the carrots, onions, and garlic in chicken broth until they are soft. This takes around 20 minutes, so once it gets going I like to get some dishes or reading in while I wait (I'm reading the Wingfeather Saga to the boys and we are loving it)! Add the ramen noodles and cook as directed (mine only take 3 minutes). Add the chicken and spinach during the last minute. Enjoy!
Crock Pot Potato Soup
Ingredients:
- 1 box chicken broth (ish)
- 1 can cream of chicken soup (or make your own!)
- diced potatoes
- 8 oz cream cheese
- optional: diced onions and bell peppers
That's it! Three hot and delicious soups. What's your favorite easy Fall meal? I'd love to add a few more soups to my arsenal! And my family would probably be grateful to add a few non-soups. Whatcha got?
