Favorite Easy Fall Dishes

Hey friends! I put together a little bonus post this week with a few of our fall-favorite meals that are super easy to make! Spoiler: they're all in the soup family. Apparently I love a hot soup on a cool day!

I'm just going to list all the recipes for you in this post because they're so short and simple:




Pumpkin Sauce Soup

Ingredients:
  • 1 jar of Pumpkin + Butternut Squash Pasta Sauce (I love the one from Aldi - I buy a case every fall!)
  • 1/2 - 1 c. heavy cream
  • milk to thin
  • salt and pepper
Combine pasta sauce and cream in a blender. Add milk to thin if needed. Heat in a saucepan and add salt + pepper if needed. Then eat it up! We like it with a sprinkle of cheese on top and a few crackers, or it's great with grilled cheese. You can also do this recipe with regular tomato pasta sauce for a creamy tomato soup!


Ramen

Ingredients:
  • chicken broth
  • diced carrots
  • diced onion
  • minced garlic
  • Ramen noodles
  • spinach
  • leftover chicken, chopped
No amounts here, sorry! I just fill a saucepan with broth and dump in veggies until it seems like enough for all of us.

This one takes a few minutes to prep and get the veggies chopped, but once that's done it's super easy. Just simmer the carrots, onions, and garlic in chicken broth until they are soft. This takes around 20 minutes, so once it gets going I like to get some dishes or reading in while I wait (I'm reading the Wingfeather Saga to the boys and we are loving it)! Add the ramen noodles and cook as directed (mine only take 3 minutes). Add the chicken and spinach during the last minute. Enjoy!


Crock Pot Potato Soup

Ingredients:
  • 1 box chicken broth (ish)
  • 1 can cream of chicken soup (or make your own!)
  • diced potatoes
  • 8 oz cream cheese
  • optional: diced onions and bell peppers
I fill my crockpot about halfway with diced potatoes and add onion and peppers if we're using them (I like it with them but the kids prefer without). Then cover them with chicken broth and add the soup + cream cheese. Cook on high for 6-7 hours.
