Do cookies count as crafts? I'll let you decide. But either way, these shortbread cookies are so good and so easy to make! They only take three ingredients that you probably already have in your kitchen. They are perfect to make in a hurry for last minute guests, a cookie swap, or a movie night with the kids! Don't let the Christmas season go by without giving them a try!
Shortbread Cookie Ingredients:
- 1.5 cups butter, room temperature
- 1 cup powdered sugar
- 3 cups all purpose flour
- optional: 1/2 c. chocolate chips for dipping
These are really simple to make, but a the dough may seem a little strange to work with compared to other types cookies if you're not expecting it (so I also like to call them "Don't Panic Cookies") but just stick with me and you'll be enjoying delicious buttery goodness in no time!
- Cream together butter and sugar until light and fluffy.
- Add flour and mix until just combined. The dough will look very crumbly. Don't panic.
- Form dough into a ball, then place between two sheets of parchment paper or wax paper and roll out to about 1/4" thick.
- Use cookie cutters to cut out shaped cookies, or use a knife to cut the dough into rectangles (I used a small biscuit cutter). Carefully transfer cookies to a cookie sheet lined with parchment paper. If you cut the cookies too large they might fall apart when you try to transfer them.
- Bake at 325 degrees for 12 -15 minutes until edges are firm. They may not look much different than when you put them in the oven - but that's ok! Don't panic.
- Let them cool.
- Optional: melt chocolate chips in the microwave (or double boiler) stirring every 15 seconds until smooth. Dip cookies in chocolate, or drizzle chocolate over cookies.
